Philly Vegan Guy's Chili Con Conscious

Eric Belfi, aka  Philly Vegan Guy, is our second place winner in Super Philly Chili Bowl 2017! He has kindly shared his recipe for his Chili Con Conscious dish which received great praise from the judges and attendees!

  • 2 tbsp vegetable oil
  • 2 lbs mushrooms, minced
  • 2 red bell peppers , chopped
  • 2 green bell peppers, chopped
  • 2 poblano peppers, chopped
  • 2 jalapeño peppers, minced
  • 2 medium onions, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tamari
  • 6 oz can tomato paste
  • 32 oz vegetable stock
  • 15 oz can black beans
  • 15 oz can red kidney beans
  • 15 oz can white beans
  • 1 package (11 oz) Beyond Beef crumbles
  • 3 tbsp chili powder
  • 1 tbsp cumin
  • Salt and pepper, to taste


Sauté mushrooms in oil until brown and moisture has evaporated.  Add onions and sauté for 5 minutes. Stir in tamari. Add remaining vegetables and garlic and cook for 10 minutes. Add salt and pepper and tomato paste. Stir to combine. Add chili powder and cumin and stir. Add vegetable stock, beans and beef crumbles. Stir to combine. Simmer for at least 1 hour, taste and adjust seasoning as needed.
